Hey, I was wondering if you could post a link to the recipe for that Hokkaido soup? I'm in love with all Asian food, and it's so much easier to make Asian vegan dishes than nearly any other region's foods
I don't have a link, I sort of made it up, so you'll probably find better ones elsewhere, but here it is: 2 smaller hokkaido pumpkins, 1 potato, 3 carrots, 1 onion, vegetable stock, bit of turmeric.
Peel the pumpkins (unless you're making the pumpkin bowls), potato and carrots and cut them into small pieces. Prepare 1 litre of vegetable stock (basically I just throw that cube thingy, I don't know what it's called in English to be honest, into boiling water). Fry the onion on medium heat for a minute then add the pumpkins and fry for a few more minutes. Throw it into the stock and add potato and carrots. Cook until the veggies are soft enough and blend until smooth. Add turmeric, salt if needed, and other spices if you want. Pumpkin oil goes great with it, sesame and pumpkin seeds as well.
