Ingredients: 1 can 15 ounces black beans, drained and rinsed. 1/2 cup breadcrumbs. 1/4 cup finely chopped red onion. 2 cloves garlic, minced. 1 tablespoon ground flaxseed. 1 tablespoon water. 1 teaspoon smoked paprika. 1/2 teaspoon ground cumin. Salt and pepper to taste. 2 ripe avocados. 1 lime, juiced. 2 tablespoons chopped cilantro. Salt to taste. Plantain chips, for serving.
Instructions: Use a fork or potato masher to mash the black beans in a bowl until they are mostly smooth. Salt and pepper the food and mix in the ground flaxseed, water, smoked paprika, cumin, and breadcrumbs. Mix everything together well. Split the mixture in half and use your hands to make a patty out of each half. Set the skillet on medium heat and add a little oil to it. For four to five minutes on each side, or until golden brown and hot all the way through, flip the patties over. In the meantime, mash the avocados in a bowl to make the guacamole. Add salt, chopped cilantro, and lime juice and mix well. You can put the black bean burgers on buns and serve them with plantain chips and guacamole on the side.
