Japanese souffle pancakes appear to the latest dessert craze in the city, so I was eager to try a new recent outpost in midtown, Softbite, which didn’t disappoint, and it seems like I’ve made it my goal to unintentionally eat my way through Softbite’s entire menu lolol.
They share their space with Nomadworks so seating is a bit limited, probably fitting only 6-8 people max (a row of high top chairs and one bench) so I probably wouldn’t recommend going with a party larger than 1-2. Since I’ve gone by myself, I’ve been lucky enough to find seating each time. Since all the souffle pancakes are made on site, I did appreciate being told it could take anywhere from 20-30 minutes beforehand.
The first time I went, I got the Ube Sparkles souffle pancake (with ube cream, sparkles, dried ube rocks, and a Calpico stick) and the Pink Matcha drink (strawberry puree, Calpcio, and matcha), both of which were just divine. I also got the Thai Tea next (with thai tea cream, condensed milk, coconut flakes, pineapple ring and vanilla soft serve). And the other times, I tried the Very Matcha (with matcha cream, mochi, matcha pocky, and vanilla soft serve), and the Chocolatella (Valrhona's 50% chocolate and nutella glaze, 60% chocolate net, white chocolate crispearls and vanilla soft serve).
All of the different flavors I tried were equally scrumptious, but I gotta admit that their soft serve is also incredibly good and went perfectly, contrasting with the warm souffle pancakes. The pancakes are a bit on the pricey end since all of them come with soft serve, but I think it’s worth every penny. I’m definitely gonna try and finish up with eating my way through their entire menu down the line lol.
