This vibrant Sesame Citrus Soba Salad is bursting with flavor and wholesome ingredients. The combination of soba noodles, crunchy vegetables, and a tangy citrus dressing makes it a refreshing and satisfying dish.
Ingredients: 8 oz soba noodles. 1 red bell pepper, thinly sliced. 1 large carrot, julienned. 1 cup shelled edamame, thawed if frozen. 1/4 cup cilantro, chopped. 2 green onions, thinly sliced. 1/4 cup toasted sesame seeds. For the dressing:. 1/4 cup orange juice. 2 tablespoons soy sauce. 1 tablespoon rice vinegar. 1 tablespoon sesame oil. 1 tablespoon maple syrup. 1 teaspoon grated ginger. 1 clove garlic, minced. Salt and pepper, to taste.
Instructions: Cook soba noodles according to package instructions. Drain and rinse under cold water. Set aside. In a large bowl, combine cooked soba noodles, sliced bell pepper, julienned carrot, edamame, chopped cilantro, sliced green onions, and toasted sesame seeds. In a small bowl, whisk together orange juice, soy sauce, rice vinegar, sesame oil, maple syrup, grated ginger, minced garlic, salt, and pepper to make the dressing. Pour the dressing over the soba noodle mixture and toss until everything is evenly coated. Serve immediately or refrigerate until ready to serve. Enjoy!
