Ingredients: 1 leg of lamb bone-in. 4 cloves garlic, minced. 2 tablespoons fresh rosemary, chopped. 2 tablespoons Dijon mustard. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. 1 teaspoon salt. 1 teaspoon black pepper.
Instructions: Trim excess fat from the leg of lamb. In a bowl, mix minced garlic, chopped rosemary, Dijon mustard, olive oil, balsamic vinegar, salt, and black pepper to create a marinade. Rub the marinade all over the leg of lamb, ensuring it's evenly coated. Cover and refrigerate for at least 4 hours or overnight for better flavor. Preheat the Bradley Smoker to 225F 107C. Place the marinated leg of lamb on the smoker rack. Smoke the lamb for approximately 4-5 hours or until the internal temperature reaches 145F 63C for medium-rare or your preferred doneness. Once done, remove from the smoker, tent with foil, and let it rest for 15-20 minutes before carving. Slice and serve the delicious smoked leg of lamb.
