These easy slow cooker red beans will make you feel like you're in Louisiana. When cooked over rice, they are hearty and tasty thanks to the smoked sausage, thyme, and oregano that are used to season them.
Ingredients: 1 lb dried red beans. 1 onion, chopped. 1 green bell pepper, chopped. 3 cloves garlic, minced. 1 lb smoked sausage, sliced. 4 cups chicken broth. 1 tsp dried thyme. 1 tsp dried oregano. 1/2 tsp cayenne pepper. Salt and pepper to taste. Cooked rice, for serving.
Instructions: Wash the red beans and get rid of any dirt. In a slow cooker, put the smoked sausage, red beans, onion, bell pepper, and garlic. Put in the chicken broth, oregano, thyme, cayenne pepper, salt, and pepper. Use a stir to mix. For 8 hours on low or 4 hours on high, cover and cook until beans are soft. Put it on top of cooked rice.
