Ingredients: 3 lbs potatoes, peeled and diced. 1 head garlic. 2 tablespoons olive oil. 1 cup chicken broth. 1/2 cup sour cream. 1/4 cup butter. Salt and pepper to taste. Chopped fresh parsley for garnish optional.
Instructions: Cut the top off the head of garlic to expose the cloves, drizzle with olive oil, and wrap in aluminum foil. Place the diced potatoes in the slow cooker. Nestle the wrapped garlic in the potatoes. Pour chicken broth over the potatoes and garlic. Cover and cook on low for 6-8 hours or until potatoes are tender. Carefully unwrap the garlic and squeeze the cloves into a small bowl. Mash the potatoes in the slow cooker using a potato masher. Stir in sour cream, butter, and roasted garlic cloves. Season with salt and pepper to taste. Garnish with chopped parsley if desired before serving.
