Ingredients: 1 lb skirt steak, thinly sliced. 2 tablespoons olive oil. 1 teaspoon cumin. 1 teaspoon chili powder. 1 teaspoon smoked paprika. Salt and pepper to taste. 1 onion, thinly sliced. 1 bell pepper, thinly sliced. 2 apples, thinly sliced. 8 small flour tortillas. Sour cream, for serving. Fresh cilantro, for serving. Lime wedges, for serving.
Instructions: In a bowl, mix the sliced skirt steak with olive oil, cumin, chili powder, smoked paprika, salt, and pepper. Let it marinate for at least 30 minutes. Heat a skillet over medium-high heat. Add the marinated skirt steak and cook until browned, about 3-4 minutes per side. Remove from the skillet and set aside. In the same skillet, add a bit more olive oil if needed. Saut the sliced onion, bell pepper, and apples until tender, about 5-6 minutes. Warm the flour tortillas in the skillet for about 30 seconds on each side. To assemble the fajitas, place some of the cooked steak, onion, pepper, and apple mixture onto each tortilla.
