This salad is a delightful combination of fresh greens, colorful vegetables, and a homemade Thousand Island dressing that's creamy and tangy. It's perfect as a side dish or a light meal.
Ingredients: 1/2 cup mayonnaise. 2 tablespoons ketchup. 2 tablespoons sweet pickle relish. 1 tablespoon finely chopped onion. 1 tablespoon white vinegar. 1/2 teaspoon sugar. 1/4 teaspoon salt. 1/4 teaspoon pepper. 4 cups mixed greens lettuce, spinach, arugula, etc.. 1 cup cherry tomatoes, halved. 1/2 cup cucumber, sliced. 1/4 cup red onion, thinly sliced. 1/4 cup grated carrot. 1/4 cup hard-boiled eggs, chopped. 1/4 cup crumbled bacon optional. 1/4 cup shredded cheddar cheese optional.
Instructions: In a small bowl, combine mayonnaise, ketchup, sweet pickle relish, chopped onion, white vinegar, sugar, salt, and pepper. Mix until well blended to create the Thousand Island dressing. In a large salad bowl, toss the mixed greens, cherry tomatoes, cucumber, red onion, grated carrot, and chopped hard-boiled eggs. Drizzle the prepared Thousand Island dressing over the salad and gently toss to coat the ingredients evenly. If desired, top the salad with crumbled bacon and shredded cheddar cheese for extra flavor. Serve immediately and enjoy your Best Thousand Island Dressing Salad!
