Ingredients: 1 cup all-purpose flour. 1/4 cup sesame tahini. 1/4 cup unsalted butter, softened. 1/4 cup powdered sugar. 1/2 teaspoon vanilla extract. Pinch of salt. 1/2 cup blood orange curd store-bought or homemade. Powdered sugar, for dusting.
Instructions: In a mixing bowl, cream together the softened butter, powdered sugar, and sesame tahini until well combined and creamy. Add the vanilla extract and a pinch of salt, and mix again. Gradually add the all-purpose flour while stirring, until the dough comes together. It might appear slightly crumbly, but it should hold its shape when pressed. Form the dough into a flat disc, wrap it in plastic wrap, and refrigerate for about 30 minutes. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Roll out the chilled dough on a lightly floured surface to about 1/4-inch thickness. Using a cookie cutter, cut out an even number of cookies. These will be the tops and bottoms of your sandwich cookies. Place the cookies on the prepared baking sheet and bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely. Once the cookies are completely cooled, spread a teaspoon of blood orange curd on the flat side of one cookie the bottom. Top with another cookie the top to create a sandwich. Gently press down to evenly distribute the curd. Dust the assembled sandwich cookies with powdered sugar for a finishing touch. Repeat the process with the remaining cookies and curd. Serve the sesame tahini and blood orange curd sandwich cookies with joy!
