Start planning your winter garden! From late October to late November I plant cold-hardy lettuce, spinach, arugula, mizuna, carrots, and sometimes beets for harvests between February and April. I use high or low poly-tunnels to protect the crops, and because we have fairly wet winters, I do not have to water once the seedlings are established. Pictured here is Landis Winter Lettuce, a delicious butterhead selected by the Pennsylvania Dutch from the now-extinct late-1700s White Tennisball Lettuce.
