I just realized I've been making this recipe for 16 years! It's a very simple dough with flour, leavener, salt, a few eggs, and a little oil and milk. The flavor comes from the mix ins, which usually include some kind of cured pork, a strong cheese, dried fruit, nuts, and fresh herb, all diced up and folded into the batter at the end. This one has particularly strong flavors: spicy smoked sausage, aged English cheddar with mustard seeds, dried cranberries, toasted macadamias, and rosemary. It's is exceptional!
I make this bread several times a year, and its an especially good way to use up odds and ends of things bought for other purposes. You could easily replace the pork with another savory ingredient, like olives! A version with olives, rosemary, and orange zest would be an awesome addition to a cheese plate!
