I know the reason Sanji doesn't use his hands when he fights isn't this and logistically it wouldn't make much sense in the lore but I love love love my headcanon that Sanji could have some kind of nerve damage or something that makes his hands "unreliable" or "weaker" than average when he fights - so he relies more on his legs. As a person with chronic pain I think it would be so so so cool, and hey it would make the cooking aspect of his character more challenging but there are ways around it!! I love to cook and I have found ways to do it around my chronic pain so it can be done!!! I think Sanji may only be interested in women who don't like him back. My reasoning for that is when a woman starts showing genuine attraction/affection for him, he doesn't know what to do with himself.
Take Pudding for example. Sanji falls over himself for her in the beginning when she's pretending to like him, then practically ignores her once she develops actual feelings for him. Sanji reads people well, even if its subconscious. I think he knows when someone likes him or not. Thats why he's so obsessed with Nami (obviously a lesbian) and Robin (too old for him and taken). He can flirt safely with them.
