Ingredients: 2 lbs beef stew meat. 1 cup salsa verde. 1 onion, diced. 2 cloves garlic, minced. 1 can 15 oz diced tomatoes. 1 can 15 oz black beans, drained and rinsed. 1 cup corn kernels fresh or frozen. 1 jalapeno pepper, diced optional. 1 teaspoon cumin. 1 teaspoon chili powder. Salt and pepper to taste. 2 cups beef broth. 1/4 cup chopped fresh cilantro for garnish.
Instructions: Put salsa verde, diced onion, minced garlic, diced tomatoes, black beans, corn kernels, cumin, chili powder, salt, and pepper in a slow cooker. If you want to add jalapeo pepper, do so now. Add the beef broth and mix everything together. Set the timer for 7-8 hours on low or 4-5 hours on high, and cover the pot. Cook until the beef is soft. Serve hot with chopped fresh cilantro on top. Have fun!
