This garden salsa's rich, smoky flavors will up your salsa game. Ideal for parties or to give your regular meals a daring twist.
Ingredients: 6 medium tomatoes, halved. 3 large bell peppers, halved and seeded. 2 large onions, quartered. 4 cloves garlic, peeled. 2 jalapeo peppers, halved and seeded. 1 bunch fresh cilantro. 1/4 cup olive oil. Salt and pepper to taste. 1 lime, juiced.
Instructions: Set the smoker's temperature to 225F 107C. Arrange bell peppers, onions, garlic, jalapeo peppers, and tomatoes on the smoker grates. Vegetables should be smoked for two hours or until soft and charred. Take out of the smoker and allow to cool a little. Add the smoked veggies, cilantro, olive oil, salt, and pepper to a food processor. Pulse until the consistency you want is achieved. Pour the smoked salsa into a bowl and squeeze in the lime. To taste, add more salt or pepper. Before serving, let the food cool for at least half an hour in the refrigerator. Serve over grilled meats or with tortilla chips. Have fun!
