i think trout takes well to being in thick creamt soups.. chowder sorts of things .. so like make a basic stock with the trout bones, onions carrots celery etc (maybe with the addition of a couple corn cobs if you have any, to impart that sweetness into the stock). get all that together and roast it together a bit with some butter, or olive oil, and then make the stock. 

then for the final soup have it be with potatoes and heavy cream or whole milk, your choice of vegetables (i would probably end up using cabbage), onions and/or leeks, parsley, chives, your choice of seasoning.
