Ingredients: 2 cups rye flour. 1 cup spelt flour. 1 packet 2 1/4 tsp active dry yeast. 1 1/2 cups warm water. 1 tbsp maple syrup. 1 tsp salt.
Instructions: In a large mixing bowl, combine warm water, maple syrup, and yeast. Let it sit for 5-10 minutes until frothy. Add rye flour, spelt flour, and salt to the yeast mixture. Stir until a sticky dough forms. Transfer the dough to a lightly floured surface and knead for 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size. Preheat the oven to 375F 190C. Punch down the dough and shape it into a loaf. Place it on a parchment-lined baking sheet. Cover the loaf with a clean kitchen towel and let it rise for another 30 minutes. Bake the bread in the preheated oven for 30-35 minutes, or until golden brown and hollow-sounding when tapped on the bottom. Remove from the oven and let it cool on a wire rack before slicing.
