Indulge in these delightful homemade cookie cups filled with melty Rolos. The perfect combination of chocolate chip cookies and gooey caramel!
Ingredients: 1 cup all-purpose flour. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1/3 cup granulated sugar. 1/2 cup light brown sugar, packed. 1 large egg. 1 teaspoon vanilla extract. 1 cup semisweet chocolate chips. 24 Rolo candies, unwrapped.
Instructions: Warm the oven up to 350F 175C and grease a mini muffin tin. Mix the flour, baking soda, and salt together in a small bowl with a whisk. Melt the butter and mix it with the brown sugar and white sugar in a larger bowl until the mixture is smooth and creamy. Add the egg and vanilla extract and mix them in well. Slowly add the dry ingredients to the wet ones, mixing only until everything is well combined. Add the chocolate chips and mix them in. Put a tablespoon of cookie dough into each muffin tin and press down a little to make a well in the middle. Each cookie dough well should have a Rolo candy in it that is not wrapped. Spread out a little cookie dough between your hands to make it flat, then put it on top of the Rolo to cover it all the way around. After the oven is hot, bake the cookies for 10 to 12 minutes, or until the edges are golden brown. After taking the cookie cups out of the oven, let them cool for about 10 minutes in the muffin tin before carefully moving them to a wire rack to cool all the way through.
