I think you're right about Amanda and the girls being family long before the wedding - I'm sure Carisi talked about them so much (even before he and Amanda were a couple) that Serafina and Dominick Sr felt that they already knew them long before they'd even met in person.

Timeline for my (unwritten) Sonny as the girls' biological dad AU.
2012: Rollins and Carisi meet (two years earlier than in canon.) Amanda is dating Dr. Al, but breaks up with him after he cheats. Sonny is dating Nicole but breaks up with her, as she wants to focus on herself.
2013: Rollins and Carisi start dating after HR allows it, as long as they tell Liv. (Who approves)
2014: Sonny proposes on their second anniversary, in front of his family.
January 2015: They get married at the courthouse, with a reception on Staten Island. Amanda gets pregnant.
October 2015: Jesse Rollins-Carisi is born. (Maybe I'll have Amanda change her last name- to distance herself from a toxic family- but still use Rollins professionally, and Jesse just have Sonny's.) Liv and Fin are the Godparents.
2018: Amanda gets pregnant with Billie, they move to Staten Island. Same Godparents as Jesse.
2019: Billie Mabel Rollins-Carisi is born.
2019: Dr. Al wants a second chance with Amanda and tries to win her back, but stops when he sees she's married with two daughters. Jesse starts preschool.
