“California Roll” Surimi Cucumber Sandos
This is all conceptual !!! I haven’t tried it yet
Ingredients
Shokupan or white bread, TBD
English cucumber
Surimi, fine shreds
Kewpie mayo (?)
Shiso, finely sliced (“perilla” in Korean)
Whipped cream cheese
Soy sauce
Sesame seeds
MSG
wasabi, avocado*
Thinly slice cucumbers, salt + drain
Combine surimi, kewpie (?), whipped cream cheese, shiso, soy sauce, sesame seeds, and msg**
Spread a thin layer of whipped cream cheese onto bread before laying down sliced cucumbers.*** Then add surimi mix.
Spread a thin layer of whipped cream cheese onto the second slice before topping the sandwich (creates uniform contact with bread and flavor layer).
[May want/need to wrap in plastic wrap and refrigerate here. Unsure.]
Cut off crusts + cut diagonally.***
*MSG may be unpopular for marketing
**Saw someone on tiktok add wasabi? OP used avocado but that feels too savory for this. Mascarpone could be good but might be too sweet. Avocado mixed with mascarpone? hm.
***Optionally: to get a good cross section, lay cucumbers sliced length-wise in one direction, then cut sandwiches perpendicular, or lay cucumbers square with bread and cut straight across:
Notes
Pulls from Logan Moffitt salad (IG / TikTok), TheKitchn cucumber sandwiches, and serious eats Japanese Fruit Sando instructions
