Not only are these rainbow-colored ice cream sandwiches beautiful to look at, they're also fun and tasty to eat. Ideal for events or whenever you want to give your desserts a splash of color!

Ingredients: 1 quart vanilla ice cream. Assorted food coloring red, orange, yellow, green, blue, purple. 12 cookies of choice sugar cookies or shortbread work well.

Instructions: Split the vanilla ice cream into six equal parts. You can make the colors of the rainbow by adding a different food coloring to each scoop of ice cream. Spread out a layer of each color of ice cream in a baking dish lined with parchment paper to make a rainbow. Put it in the freezer for one to two hours until it gets hard. Cut the ice cream into rounds with a cookie cutter once it's hard. Put two cookies in between each round to make a sandwich. Put plastic wrap around each sandwich and freeze them until you're ready to serve them.
