You can make tasty, tender pulled pork quickly in a pressure cooker. It's great for sandwiches or as a main dish.
Ingredients: 3 lbs pork shoulder, trimmed and cut into chunks. 1 cup barbecue sauce. 1/2 cup apple cider vinegar. 1/4 cup brown sugar. 1 tablespoon mustard. 1 tablespoon Worcestershire sauce. 1 teaspoon garlic powder. 1 teaspoon onion powder. 1 teaspoon smoked paprika. 1/2 teaspoon black pepper. 1/2 teaspoon salt. 1/4 teaspoon cayenne pepper. 1 cup chicken broth.
Instructions: Season pork chunks with salt, pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper. In the pressure cooker, combine pork chunks, barbecue sauce, apple cider vinegar, brown sugar, mustard, Worcestershire sauce, and chicken broth. Seal the pressure cooker and set it to high pressure for 60 minutes. Once cooking is complete, allow natural pressure release for 10 minutes, then manually release the remaining pressure. Shred the pulled pork using two forks. Serve the pulled pork on buns or with your favorite sides. Optional: Drizzle with additional barbecue sauce before serving.
