Ingredients: 2 cups leftover cabbage, thinly sliced. 1 apple, thinly sliced. 1/4 cup mayonnaise. 2 tablespoons apple cider vinegar. 1 tablespoon honey. 1/2 teaspoon Dijon mustard. Salt and pepper, to taste. 1/4 cup chopped fresh parsley. 1/4 cup chopped walnuts optional.
Instructions: In a large bowl, combine the leftover cabbage and sliced apple. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper. Pour the dressing over the cabbage and apple mixture and toss to coat evenly. Refrigerate the slaw for at least 30 minutes to allow the flavors to meld. Before serving, sprinkle with chopped fresh parsley and chopped walnuts if desired. Serve cold and enjoy!
