Quick recipe time again!
Today I will introduce you to the carb-fat-salt overload that is the potato-cracker-cheese-onion combo.
Whaaa! Potato & cracker? Isn’t that like a carb overload that my high masters at the diets forbade us to indulge in?
Uh... yeah. But it’s yummy, therefore it has a right to exist (as oppose to the blatant crime against humanity that are the Burger King onion rings) Anyway, you need:
- precooked cold potato (like yesterday’s leftover) - Cracker (preferably thick ones with sesame seeds) - Good hard cheese - Spring onion - Fried shallots (these) - A microwave (to cook in you silly, not to eat) Slice the potato up. Cut the spring onion into rings. Put the potato on the cracker, then sprinkle the green onion onto the potato. Put a slice of cheese (or more) on top. Then put this in the microwave for 20-30 secs - long enough to melt the cheese, but not too long to make the cracker go soggy. (can also use an oven, but that’s hardly quick) Then, finally, sprinkle the friend onion on top (as much as you like) Tadaaa: Yummyness! Also, if you didn’t know about fried shallots before: You can buy them in any store selling South-Asian food (particularly Taiwan or Indonesian). They are amazing and go with just about anything savory. You will thank me for introducing them to you.
