I think our problem with Snow is her reaction to Emma, because most of us feel like we personally relate to it. She represents the parent who for even a moment didn't believe in us when we needed them to. She represents the parent who tries so hard to understand what is happening in their child's life, but cannot relate, and when they forget to take into consideration how their child feels, the child gets hurt. It hurts us because Emma felt so alone in that moment, and that was when she needed her parents to be there for her, more than ever, and they weren't. And no one is doubting their love for her, but it was the actions that while might have been a reaction, was not one that was well-timed or thought out.
