A delicious and hearty casserole that combines the flavors of tacos with beef, rice, and all your favorite toppings. Perfect for a family dinner or potluck.
Ingredients: 1 lb ground beef. 1 onion, diced. 1 bell pepper, diced. 2 cups cooked rice. 1 cup salsa. 1 cup shredded cheddar cheese. 1 packet taco seasoning. 1 can black beans, drained and rinsed. 1 cup corn kernels. 1/2 cup sour cream. 1/4 cup chopped cilantro. Salt and pepper to taste.
Instructions: Start by heating the oven to 350F 175C. In a big pan, cook the ground beef over medium-low heat until it turns brown. Get rid of extra fat. Chop up some onions and bell peppers and add them to the pan. Cook them until they're clear and soft. Don't forget to add the salsa and black beans to the cooked rice. After a few more minutes, make sure that everything is well mixed. Put the mixture in a casserole dish that has been greased. Cover the whole thing with shredded cheddar cheese. Put it in an oven that is already hot and bake for about 20 minutes, or until the cheese melts and bubbles. Take it out of the oven and let it cool down for a while. Before serving, top with sour cream and chopped cilantro. Add pepper and salt to taste. Have a great time with your beef and rice casserole!
