Loaded Baked Potato Casserole Ingredients: 3 pound bag of red potatoes 6 slices bacon, cooked and crumbled 6 tablespoons butter, melted 1 cup sour cream 2/3 cup of cream ½ teaspoon salt ½ teaspoon black pepper 3 green onions, chopped 2 cups shredded Cheddar cheese Recipe: Preheat oven to 350 degrees. -Wash and dry potatoes and prick all over with a fork. Arrange potatoes on a rimmed baking sheet and bake for 40-60 minutes or until tender. Remove from oven and let cool. -After potatoes have cooled, cut them into large bite-size chunks and place them in a large bowl. -In a separate bowl, combine melted butter, sour cream, cream, salt, pepper, all but 1 tablespoon of the green onions, half of the bacon, and half of the shredded cheese. -Pour the mixture over the potatoes and stir to combine. -Spray a casserole dish with non-stick cooking spray. Transfer the potatoes into the prepared casserole dish. -Top with remaining cheese. Sprinkle with reserved green onions and bacon.
