This sushi roll in a lunch box is easy to pack and tastes great. It's also full of healthy nutrients. For making meals ahead of time or lunches to go, this is great.
Ingredients: 2 cups sushi rice. 2 1/2 cups water. 1/4 cup rice vinegar. 2 tablespoons sugar. 1 teaspoon salt. 4 nori seaweed sheets. 4 ounces smoked salmon, thinly sliced. 1 cucumber, julienned. 1 avocado, sliced.
Instructions: Rinse sushi rice under cold water until water runs clear. Combine rice and water in a rice cooker and cook according to manufacturer's instructions. In a small saucepan, heat rice vinegar, sugar, and salt over low heat until sugar dissolves. Transfer cooked rice to a large bowl and gently fold in the vinegar mixture. Place a nori sheet on a bamboo sushi mat, shiny side down. Spread a thin layer of rice over the nori, leaving a 1-inch border at the top. Arrange slices of smoked salmon, cucumber, and avocado evenly over the rice. Starting from the bottom, roll the sushi tightly using the bamboo mat. Moisten the top border of the nori with water to seal the roll. Repeat with remaining ingredients. Using a sharp knife, slice each roll into 8 pieces. Serve with soy sauce, pickled ginger, and wasabi, if desired.
