Pineapple vodka is a thing, yeah? And you can go out and get a bottle but if you’re short on cash or don’t feel like crowding your liquor cabinet with ANOTHER bottle you might use, what, a few times a month if that (even if pineapple adds a surprising amount of brightness to a lot of cocktails, the things I learn on accident, guys. What I totally didn’t use pineapple vodka instead of regular when making a drink the other day what NO) So. What IF, for reasons, you don’t want to buy pineapple vodka?
Another super easy (though time consuming) fix but you don’t have to watch the stove for this one! Nope. You just need a clean jar, some pineapple, some vodka, and about a week or so. The recipe here calls for a full bottle of vodka to a full pineapple but just keep the ratios about similar and you could swing this with a tin from the grocery store and an equal volume of your booze. Just have a jar you can fit them in!
Pantry Pineapple Vodka
1 8oz can pineapple rings
250 ml vodka
a mason jar
time
Layer your pineapple in the jar around the edges, or in any way that will get the most surface exposure to the vodka. Pour in vodka, covering the pineapple. Let sit for 10 days in a cool, dark place, like the pantry! Strain and enjoy.
