This lime and mint roast chicken sandwich is full of tangy flavors and fragrant herbs, making it a great choice for a picnic or light lunch.
Ingredients: 2 boneless, skinless chicken breasts. 2 limes, juiced and zested. 2 tablespoons olive oil. 1 tablespoon honey. Salt and pepper to taste. 1/4 cup fresh mint leaves, chopped. 4 slices sandwich bread. Lettuce leaves, for garnish. Sliced tomatoes, for garnish. Mayonnaise, for spreading.
Instructions: Warm the oven up to 190C 375F. Mix olive oil, honey, salt, and pepper with lime juice and zest in a small bowl. Put the chicken breasts in a baking dish and pour the lime marinade over them. Make sure the chicken is covered all over. For at least 30 minutes, let it sit. After the oven is hot, bake the chicken for 25 to 30 minutes, or until it is fully cooked. Take the chicken out of the oven when it's done and let it rest for a few minutes before cutting it into thin slices. Spread mayonnaise on each piece of bread to make the sandwiches. Place chicken slices on one piece of bread. Add lettuce leaves and tomato slices on top of the chicken. Cover the chicken with chopped mint leaves. Add the last slice of bread on top to make a sandwich. Cut the sandwich in half and serve right away.
