Uji matcha soufflé pancakes; aud15.50 from pop-up Kumo Kumo at Shimizu cafe, Northbridge (until August). Braved the cold on Friday night and went on opening night to check out this new pop-up. Queued for around 32 minutes at 9 degrees - tip: bring gloves. Gotta be my luck to get overdone soufflé pancakes - it’s edible but not as soft as I’d expected of soufflé pancakes. The matcha cream wasn’t too sweet and wasn’t bitter at all. Perhaps it was their opening night, the consistency of the pancakes wasn’t the same which is a huge shame (refer to the second last pic) as I’d really been looking forward to this pop-up and wanted to love them. Hopefully they’ve improved by now. Shimizu cafe wasn’t accomodating even if patrons wanted to dine-in (order drinks and desserts from Shimizu while having the pancakes from Kumo Kumo). Instead, the server said one could only sit indoors if mains were ordered from Shimizu - At 9:40pm.
