The crispy naan bread serves as a perfect base for the tender prime rib slices, and the horseradish cream adds a zesty kick to every bite. Ingredients: 2 cups leftover prime rib, thinly sliced. 4 pieces naan bread. 1 cup shredded cheddar cheese. 1/2 cup sour cream. 2 tablespoons prepared horseradish. 1/4 cup mayonnaise. 1 clove garlic, minced. 1 tablespoon fresh parsley, chopped. Salt and pepper to taste. 1 tablespoon olive oil. 1/4 cup red onion, finely chopped. 1/4 cup pickled jalapeos, sliced optional. 1/4 cup black olives, sliced optional. 1/4 cup fresh cilantro, chopped optional.
Instructions: Preheat your oven to 400F 200C. Cut the naan bread into triangles or your desired nacho shape. Arrange the naan pieces on a baking sheet, and brush them lightly with olive oil. Sprinkle shredded cheddar cheese evenly over the naan pieces. Place the baking sheet in the preheated oven and bake for about 5-7 minutes or until the cheese is melted and the naan bread is slightly crispy. While the naan nachos are baking, prepare the horseradish cream by mixing sour cream, prepared horseradish, mayonnaise, minced garlic, chopped fresh parsley, salt, and pepper in a bowl. Stir until well combined. Once the nachos are ready, remove them from the oven. Top the cheesy naan nachos with thinly sliced leftover prime rib and finely chopped red onion. If you like some heat, add pickled jalapeos and sliced black olives for extra flavor. Drizzle the prepared horseradish cream over the nachos or serve it as a dipping sauce on the side.
