This is an amazing question!
My personal favorite Path, which I've played on several characters, is the Path of Lilith. They have a very interesting view on the vampiric curse, seeing the pain and anguish of the curse as being something to embrace. Reminds me of that old Tyrion Lannister line of "wearing it like armor, and it can never again be used to hurt you." They cause pain to others, accept pain themselves, but they also are capable of being intimate and even compassionate teachers, and often serve as undead midwives for new Embraces. More interesting, the Path of Lilith is considered heretical within the Sabbat, meaning you have to do this dance of embracing your bloody spirituality while also trying to be careful and toe the line of the Noddist blood cult you're part of, a persecuted minority who still has a better chance fitting in with the monstrous Sabbat than the Camarilla.
Another Path I like is the Path of Cathari. They have another unique view on vampirism, where they are Gnostics that believe in reincarnation and don't see death as necessarily a bad thing. In their view, Earth is hell, and the only way to escape is to die while free of temptation and attachment. Their role is to embody that temptation, to revel in every kind of excess and lust and tempt mortals to join them, either just for a night, becoming ghouls, or giving them the Embrace, which they see as a Gift. Their Path doesn't focus on restraining the Beast, but believes that they smother the Beast is so much pleasure and enjoyment that it has no reason to act out in a Frenzy. Basically the ultimate hedonists but with an interesting, dark spirituality behind it.
Of course, the classic Path of Caine is also vitally important to the Sabbat, as it's the most common one for Pact Priests and high ranking members of the Sabbat's right wing. This is where you get a lot of the Sabbat's ideology from, their justification of diablerie and murder, but also their paranoid worldview about Gehenna being right around the corner and the Antediluvians rising up soon. Not a Path I find appealing to play, but damned fun to roleplay as!
Power and the Inner Voice is a fun one I enjoy on Sabbat elder NPCs, pretty uncomplicated and perfect for a Ventrue, based on ruthless personal advancement, authority, and hierarchy. And Path of the Honorable Accord is very fun for a dark knight, like a Salubri or Ventrue Antitribu, where they're actually pretty similar to Humanity in their values, but embody better than anyone else that faded glory of the old Sabbat.
