This pantry pasta recipe is a quick and easy way to make a meal with things you probably already have in your pantry. It's great for busy weeknights when you need a quick and easy dinner.
Ingredients: 250g pasta any type you have. 2 tablespoons olive oil. 3 cloves garlic, minced. 1 can 400g diced tomatoes. 1 teaspoon dried oregano. Salt and pepper to taste. Grated Parmesan cheese, for serving optional. Fresh basil leaves, chopped, for garnish optional.
Instructions: Follow the directions on the package to cook the pasta until it is al dente. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. Add the minced garlic and cook for about one to two minutes, until the garlic smells good. Tomato dices and dried oregano should be added. Add pepper and salt to taste. Let the sauce simmer for 5 to 7 minutes to let the flavors blend and the sauce get a little thicker. When you add the cooked pasta to the pan, toss it around so that the sauce covers all of it. If you want, you can serve it hot with grated Parmesan cheese and chopped fresh basil leaves on top.
