This pan-grilled chicken with peach salsa is a delightful combination of savory and sweet flavors. The juicy grilled chicken pairs perfectly with the fresh and vibrant peach salsa, creating a light and satisfying dish.
Ingredients: 4 boneless, skinless chicken breasts. Salt and pepper to taste. 1 tablespoon olive oil. 2 ripe peaches, diced. 1/4 cup red onion, finely chopped. 1 jalapeo pepper, seeded and minced. 2 tablespoons fresh cilantro, chopped. Juice of 1 lime. 1 tablespoon honey.
Instructions: Set a grill pan over medium-high heat to get it hot. Add salt and pepper to the chicken breasts. Spread olive oil on the grill pan. Chicken breasts should be cooked all the way through after being grilled for 6 to 8 minutes on each side. Mix diced peaches, red onion, jalapeo, cilantro, lime juice, and honey in a bowl while the chicken is cooking on the grill. Combine well. Take the chicken off the heat and let it rest for a few minutes. Peach salsa should be put on top of the chicken breasts.
