Purple sweet potato fries, sautéed cabbage & Brussels (cooked in coconut oil with fresh parsley, thyme and salt), and half a large avocado. . . For the fries: Preheat oven to 375 deg F. Cut an extra large purple sweet potato into fry shapes. Put in a large mixing bowl and coat with 1 Tbsp olive oil. Sprinkle on 1 tsp ground mustard, 1 tsp flaked sea salt and 1/4 tsp nutmeg. Mix with hands until fries are well coated. Lay out on parchment lined baking sheet.
