Cinnamon Apple Cobbler baked in my Stanley Basecamp pot. I used a modified Coleman mess kit as my baking pan and tested that on top of the other piece of the mess kit so it wouldn't burn on the bottom. If it were less windy I'd have liked to have coals on top but they kept blowing off and burning the deck so that was a no go. It was delicious! Courtesy of a Bisquick just add water biscuit mix I got at Dollarama. I added 2/3cp brown sugar 1tsp cinnamon. Mixed that together. tossed the diced apples in the dry batter mix. tossed in the sugar and cinnamon at the same time. It used 3 granny Smith apples. (smaller apples) I sprinkled 1/3 of the cinnamon sugar mixture on top and stuffed more apple pieces on top. Two pieces of apple would likely result in a better baked top. The mix only requires 1/2cp water and I believe the apples released alot of moisture into the cobbler as it baked very slowly. It needs to be baked over a high flame with hot charcoal briquettes on top of the lid. Mine was underdone just a tad around the apples in the middle on top but we just ate around it. it was maybe only a tbsp worth that we threw out. Too big for dessert.
