Totally random pick from the book tonight, the Union League, found in Frank Caiafa’s They Waldorf Astoria Bar Book. I consulted tonight with my partner’s @evagoodmanglass daughter and after she nixed my choice of a Bijou I pointed to the bookshelf. Randomly opening to the page, she declared the Union League to be tonight’s special. Taking it’s name from one of NYC’s oldest social clubs it combines Old Tom Gin with Tawny Port and a dash of orange bitters. Note: I had to go way back in my back bar to find that Tawny Port. For lack of an orange, I settled on a lemon twist to garnish. Simple, classic. A welcome addition to the selections.
