Old bananas... During my massive diet overhaul this spring after too many indulgent nights out in Honolulu, I discovered these “cookies” that are packed with protein, and perfect as a snack, or breakfast. The other thing I love about them, despite the fact they are super healthy, is that you can find a good purpose for those bananas you didn’t eat when they were ripe. Banana Oatmeal Cranberry Nut “cookies” 4 overripe small bananas 1.5 cups oats 1 tsp cinnamon 1/4 tsp butter or coconut oil 1/2 tsp almond butter 3/4 tsp sugar, maple syrup or honey 1/4 cup walnuts 1/4 dried cranberry or raisins heat oven to 350 mash everything except walnuts and cranberries add walnuts and cranberries to mixture Drop a tablespoon onto a greased cookie sheet, possibly flatten with the back of a spoon bake 35 minutes possibly rotate at half way point flip cookies over bake another 10 minutes Cool. They will harden the longer they set.
