An enjoyable salad with the nutty goodness of quinoa clusters, the freshness of mixed greens, and the sweetness of blueberries. A tasty maple dressing brings it all together.
Ingredients: 1 cup quinoa. 2 cups mixed greens. 1 cup blueberries. 1/2 cup chopped nuts e.g., almonds or walnuts. 1/4 cup maple syrup. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste.
Instructions: Rinse quinoa well and cook it as directed on the package. Wait for it to cool down. Toast the chopped nuts over medium-low heat in a small pan until they turn golden brown. Put away. To make the dressing, mix the maple syrup, olive oil, balsamic vinegar, salt, and pepper in a bowl with a whisk. Mix mixed greens, cooked quinoa, and blueberries together in a large bowl. Add the dressing to the salad and gently toss to cover everything. Put groups of the toasted nuts on top of the salad. Serve right away and enjoy!
