lockdown diaries, day 208 ...
Well over six months has passed since South Africa locked down against Covid-19. Our voluntary quarantine in March has taken that closer to seven months, although the last few weeks have been a far cry from the first month. While vastly better off than India, Brazil or the UK or USA, South Africa is still not out of the woods; new infections are continuing to tick along at a little less than 2000 a day, and recoveries are no longer reducing the total number sick. The death toll has taken an ominous little jump upwards; rather than averaging 50 a day or less, it has been around 150 for three days in succession. Still, keeping things down at these levels is no small victory for what many look down on as âa third-world country with first-world pretensionsâ; and I amongst others put it down to a simple set of clear and consistent hygiene rules, imposed from the outset, repeated by the President in every broadcast speech to the nation, and backed by law. The restrictions on economic and social activity were severe to start with, but have been gradually and cautiously eased, so far without the need for local back-tracking. Even with a growing minority becoming âcavalierâ about the rules, and even with three-quarters of the population unable to ever follow the Government health advice to the full, the pandemic has been managed without the âstate of national disasterâ turning into a humanitarian crisis, or a âsecond waveâ as high as the first. (By comparison, this week the UKâs daily infection rate soared past South Africaâs all-time peak for the second time. The population sizes are closely similar.) It has been quite bad enough for many people. The housekeeper for our apartments comes in just one day a week, but has had to support her family on that one dayâs cleaners wages, as her husband has had no work. With another of the tenants here, we have been paying her to come in for an extra day per fortnight; and this week she told us that her husband has now got a job again. It is still too early to tell how well or how soon the tourist industry will revive, or how many more of the hundreds of dependent businesses will go to the wall.
Bare Minimum Indian Cooking
So....Indian Food! Yummmmm
Most of us like Indian food and many of us love it. And many of us love it love it love it! But when it comes to cooking it, it seems like such an impossible task that many give up even before trying.
Well, worry not! Your friend here is gonna at the least try and make it easy for you :) Lets begin with the elephant in room - SPICES...Indian spices. Spices are a tricky lot for sure. Less of some wonât make your dish fail but more of some might very well. In this post Iâll begin with only 5 of the spices that you can use to make many many Indian dishes. These are the only five even I use almost 90% of the times. Baby Steps!Â
First things first, if youâre not in India, please march over to an Indian store in your area. I hope you all have at least one around you. The reason I ask you to get the spices from an Indian store because not only do you know thats where Indians shop for spices, but also thats where youâll get the cheapest spices. Iâm always surprised by spice prices in your regular grocery chains such as Target, WholeFoods etc.
Now when you go the spice section, you might feel overwhelmed with the variety of brands youâd see for all these spices. And Iâm not gonna suggest you to buy the most superior product, because more likely than not, its going to be more expensive too. If youâre a beginner, just get the cheapest! It might not be the best product but itâd still be good. This way you wonât waste a fortune on something you wanted to try just once for example.
An easy way to store your spices once youâve opened the packets is to put them in air tight containers and put in a cool dry place. But if you cant do that, you can do what I do - store them in the freezer. I canât say whether its a good way but it does keep my spices fresh and they last for long.
Cool, on with it. Hereâs are the basic spices Iâd recommend you get. Iâd share the simplest of recipes in the subsequent posts.
1. Turmeric powder - adds subtle flavour and beautiful colour
2. Coriander powder / seeds - subtle flavour, use either the powder or crushed toasted seeds
3. Cumin seeds/ powder - strong flavour, use toasted seeds (I prefer) or in ground form
4. Red chilli powder - subtle flavour and heat. I recommend using Kashmiri chilli because while it adds strong colour and flavour, its quite mild in heat.
5. Garam Masala - spice blend
All of the above spices are pretty standard, but one - Garam Masala. Garam Masala is a blend of a bunch of roasted spices such as Bay Leaf, Cinnamon, Cardamom, and such. The thing with it is that its super versatile. There are tens of brands with multiple products each and no two will have the same taste. Theyâre sold with recipe specific names such as Meat Masala, Chicken Masala, Chole Masala etc. But keep in mind, theyâre all just a blend of specific spices.
What I do is buy a few of them at a time, and then see for myself which I like the best flavour wise. In recent times Iâve liked MDH Rajmah Masala a lot. So you can begin with that if youâd like. Rajmah is Kidney beans in Hindi, if you were curious :)
If youâre someone who likes Indian food but dreads cooking it or cooking at all in general, I really really hope you go to the store and get just these 5 things. I promise you wonât regret it! My Blanket Hogger vouches :)
