With joy 🧚‍♀️ I welcome a newfound love of scallops. (My mother told me I relished them as a toddler and ate them until I was sick of them - how awful for this to happen with such a delicious tasting food!) Now, after so many years, I look for ways to enjoy these delicate morsels. In keeping with a desire to eat rainbow colored food and incorporating as many complimenting ingredients as possible, this tasty combination came to life! First I raked mashed sweet potatoes on the plate. Then topped the potatoes with beautiful scalloped edged 💃🏼mushrooms and finished the dish with pan seared scallops, fire roasted tomatoes, cilantro and a warm bed of tender spinach. Thanks to @borsari_foods for the citrus 🍋seasoning, a perfect 👌🏼 blend to bring out all the flavors.
