Ingredients: 2 cups diced zucchini. 1 cup sliced mushrooms. 1 cup cherry tomatoes, halved. 1 cup cooked black beans. 1/4 cup chopped fresh basil. 2 tablespoons olive oil. 2 cloves garlic, minced. Salt and pepper to taste.
Instructions: Get the oven ready by heating it up to 400F 200C. Put chopped basil, cherry tomatoes, black beans, zucchini, and mushrooms in a large bowl. Put minced garlic on top of the vegetables and drizzle them with olive oil. Toss until everything is covered. Add pepper and salt to taste. Evenly spread the mix out on a baking sheet that has been lined with parchment paper. Roast the vegetables in an oven that has been heated up for 20 to 25 minutes, or until they are soft and slightly caramelized. In the daisy garden, serve hot as a tasty vegan dish.
