These Homemade Mint Chip Oreos are a delicious twist on the traditional store-bought cookies. They're ideal for satisfying your sweet tooth, with a rich chocolatey exterior and a refreshing mint chip filling.
Ingredients: For the Cookies:. 1 cup butter, softened. 1 cup granulated sugar. 1 egg. 1 teaspoon peppermint extract. 2 cups all-purpose flour. 1 cup cocoa powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. For the Mint Filling:. 1/2 cup butter, softened. 2 cups powdered sugar. 1 tablespoon milk. 1 teaspoon peppermint extract. 1/4 teaspoon green food coloring optional. 1/2 cup mini chocolate chips.
Instructions: Regarding the cookies: Warm the oven up to 350F 175C and put parchment paper on baking sheets. Melt the butter and mix it with the sugar in a large bowl until the mixture is light and fluffy. Add the egg and peppermint extract and mix them in well. Mix the cocoa powder, baking soda, salt, and flour together in a different bowl using a whisk. Mix the dry ingredients into the wet ingredients one at a time until a dough forms. Make little balls out of the dough and put them on the baking sheets that have been prepared. Press down on each ball with your hand or the bottom of a glass. After 10 to 12 minutes, take them out of the oven and let them cool for a few minutes on the baking sheets. Then, move them to a wire rack to cool completely. To make the mint filling, soften the butter and beat it in a bowl until it's smooth. Add the powdered sugar, milk, peppermint extract, and green food coloring if using little by little. Beat until everything is smooth and well mixed. Toss in the little chocolate chips. To Put Together: Once the cookies are completely cool, spread a lot of the mint filling on the flat side of one cookie and place another cookie on top of it to make a sandwich.
