Here's the part where I show you how I'm able to make such op stuff. While there are some modded things involved, this process is still possible in vanilla.
This whole thing will be below a read more because it's gonna get long. I highly encourage you to give it a look!
Let's start with my smithing gear~
You'll notice in the container inventory is Ahzidal's armor set, which when worn in its entirety gives a buff called Ahzidal's Genius that gives a 10 point buff to enchanting.
Next is alchemy.
You'll notice there are some arbitrary enchantments on these, that's mostly because some enchantments can be done on certain pieces of equipment and not others so I'm just filling the second slot with whatever.
Another thing is that there is no Fortify Enchanting enchantment and there is no Fortify Alchemy alchemical property, so you have to flip flop between the two to improve the two.
You start by equipping Ahzidal's gear and making a full set of items with alchemy buffs. Then you equip all that and make fortify enchanting potions with the strongest materials possible. Drink a potion, reequip Ahzidal, enchant some more that's stronger. Equip the new stuff, rinse, repeat.

Next thing you know, all your spells are 100% free, your weapons instakill, and you're basically impervious to damage. Fun stuff!

First one is her wearing the Ebony Mail (not pictured but she usually also wears Hevnoraak), second one is custom armor given to her by Hermaeus Mora after Miraak's defeat.
Colors on her Champion of Mora armor are still a wip, I kinda got lazy towards the end and wanted to be done haha

First dump of screenshots are the weapons I have on hand because it's the smallest amount. Something that's important to note here is that Skyrim's damage/armor display is sort of buggy. It will only display the first 3 digits. For the real value, look down below next to carry weight and gold.
Also worth noting is that I obviously have mods in my game. Many of these enchantments are modded in.
Melvala would actually never use a shield typically, but I made one to get the block skill to 100 for fun. She likely would dabble in everything to bolster her knowledge but her preference is for a bow.

I'm baffled by the tomato soup, idk why I have that. The sweet rolls are for Mora. The crabs are because they are VERY cute and my partner loves crabs so I can't not pick up every one I see.

Finally here's some screenshots of some random stats. The total gold is hilarious.
It's worth noting that I not only have mods adding new enchantments, but I also have a mod that enables you to wear as much jewelry as you want. This is how I'm able to shout with no cooldown as seen in the Fork video. I'm simply wearing 5 amulets of Talos at the same time.
Let's start with armor.
On the boots, you can see I have an enchantment (modded) that negates fall damage. That's how I'm able to drop from the museum balcony in the Fork video and not die. This armor set does include pants separately which is a bonus for stacking enchantments.
Melvala actually starts out using exclusively heavy armor, but as she ascends to godhood she lightens up, literally and figuratively.
Below the cut will be the jewelry and other equipment.
The downside to being able to wear as much jewelry as you want is that you're still limited to one piece of each once you enchant it (maybe unless you name it?). This isn't a problem for the amulets of Talos (not pictured, you can see them in my inventory) because each one is identical.
