These beef enchiladas are a crowd-pleaser, filled with flavorful seasoned beef, gooey melted cheese, and zesty enchilada sauce. Perfect for a cozy family dinner or entertaining guests!
Ingredients: 1 lb ground beef. 1 onion, finely chopped. 2 cloves garlic, minced. 1 can 10 oz enchilada sauce. 1 can 4 oz diced green chilies. 1 cup shredded cheddar cheese. 1 cup shredded Monterey Jack cheese. 8 small flour tortillas. Salt and pepper to taste. Chopped fresh cilantro for garnish optional.
Instructions: Preheat oven to 375F 190C. In a large skillet, cook ground beef, onion, and garlic over medium heat until beef is browned and onion is softened. Drain excess fat. Stir in half of the enchilada sauce and diced green chilies. Season with salt and pepper to taste. Spread a thin layer of the remaining enchilada sauce in the bottom of a 9x13-inch baking dish. Spoon beef mixture onto each tortilla, roll up tightly, and place seam-side down in the baking dish. Pour the remaining enchilada sauce over the top of the rolled tortillas, then sprinkle with shredded cheddar and Monterey Jack cheese. Cover the dish with foil and bake for 20 minutes. Remove foil and bake for an additional 5-10 minutes, or until cheese is bubbly and slightly golden. Garnish with chopped cilantro before serving, if desired.
