Catch your dinner! Rainbow trout are gorgeous fish, with colouring patterns that vary widely depending on habitat, age, and spawning condition. A member of the salmon family, they can grow quite large, preferring cool, clear rivers, streams and lakes, surviving on insects, crustaceans and small fish. Rainbow trout seek out the eggs of salmon as a food, so they are attracted to Spawning salmon. Whole baked trout makes a delicious dinner. Simply layer onions and lemon slices onto the outside of the fish and sprinkle with salt and pepper. Add approximately 2 tablespoons of white wine to the stomach cavity and a healthy splash on the outside of the fish, and seal with foil. Bake in a moderately hot oven or barbecue for approximately 30-35 mins for a 2kg fish.
