Ingredients: 1 cup almond flour. 1 1/2 cups powdered sugar. 3 tablespoons matcha powder. 3 large egg whites, room temperature. 1/4 cup granulated sugar. 1/2 teaspoon vanilla extract. Green food coloring optional. 1/2 cup unsalted butter, softened. 1 cup powdered sugar. 1 tablespoon matcha powder. 1-2 tablespoons milk as needed. Edible gold dust optional, for decoration.
Instructions: Sift together almond flour, powdered sugar, and matcha powder into a bowl. Set aside. In a separate bowl, beat egg whites until foamy. Gradually add granulated sugar and continue beating until stiff peaks form. Add vanilla extract and a few drops of green food coloring if desired and mix until well incorporated. Fold the dry mixture into the egg white mixture gently until the batter is smooth and has a thick, lava-like consistency. Be careful not to overmix. Transfer the batter to a piping bag fitted with a round tip. Pipe small, even circles onto a baking sheet lined with parchment paper. Let the piped macarons sit at room temperature for about 30 minutes to form a skin. Preheat your oven to 300F 150C. Bake the macarons for 15-18 minutes, or until they have developed feet and are set. Remove from the oven and let them cool on the baking sheet. While the macarons cool, prepare the matcha buttercream. In a bowl, cream together the softened butter, powdered sugar, and matcha powder. Add milk as needed to achieve the desired consistency. Once the macarons are completely cool, pair them up according to size and spread a small amount of matcha buttercream on one side. Sandwich the macarons together. For a decorative touch, you can dust the tops of the macarons with edible gold dust. Let them sit for a few hours or overnight to mature before enjoying. Serve and savor the deliciously matcha-flavored macarons!
