We made some tweaks to the roast this year to max out the flavour and body, without sacrificing the acidity. #mataquescuintla 2019 / Source+ Program - we managed to raise $713 from the 2019 harvest that was just sent back to the group in Guatemala a couple days ago. We had 8 bags from 2 producers (152lb/bag) and put aside $0.50 per roasted lb sold - plus $0.50 for each pour over out of the shop. If you've been enjoying the Dom the past year you've been enjoying Erick and Jorge's coffees, plus this added benefit. Very looking forward to the 2020 #mataquescuintla coffees, we have another 2 producers whos coffees will be profiled as the Dom again, the coffees this year are tasting even sweeter. This year's been anything but normal, and now's a great time to audit your own spending - there's been plenty of info regarding the good/bad, lots of learning and unlearning to be done. There's also been a lot of empty words for the sake of fitting in, yet a little bit of self-education goes a long way. The coffee chain itself also has an immense amount of inequity, imbalance, and ways to go, both monetarily and not. As a smaller roaster, I'm excited to keep important projects alive, welcoming back new crop coffees from friends and producers we've worked with before. Expanding on new initiatives at origin, seeing how we can give back more with the help of our importers. Saving space also means tightening our supply to what matters, especially now with a drop in overall consumption. Everything's moving around much slower, but expect stellar fresh crop Ethiopians and Guatemalans v soon, including more from the amazing people in #mataquescuintla . We'll continue to keep improving and auditing ourselves and def do not condone silencing, so we'll never mute comments, ever.
