day 1 - meals
Dinner was: mashed white beans, cooked with a little garlic, a shallot, some milk, some sharp cheese. Eaten with fresh flour tortillas.
brown a shallot in olive oil. add cloves minced garlic , cook briefly. add drained, rinsed canned white beans. add splash of milk, or if feeling fancy, cream. bring to a simmer and mash lightly. stir in cheese. season with salt and pepper.
Easy, made with pantry staples, and so goddamn good.
In the future: add acid. Will try with sauteed greens (kale?) and a fried egg. Will try with a fried egg on crusty bread.
